Preparation:
Make the brown rice according to the package directions.
Pat dry the cod fillets or loin with paper towels.
Sprinkle salt and pepper on the cod both sides and set aside.
Using a large sauté pan add the olive oil and heat on medium heat for about 1 minute.
Add the onions and cook until translucent.
Add in the garlic, chili powder, stir into the onions.
Add in the tomatoes and cook till tomatoes are slightly charred and about to burst.
Add in the fresh squeezed orange juice, and coconut milk and stir.
Add in the cod fillets or loin pieces to pan, bring the sauce to a slow simmer.
Cook approximately 15 minutes spooning the sauce over the cod occasionally.
Cook till cod flakes.
Spoon ½ cup of brown rice to plate. Carefully add cod.
Pour the sauce over the cod.
Sprinkle with fresh cilantro and a squeeze a quartered lime over each piece
